Herdade das Servas
Viticulture: Vines planted in red soils derived from brown or crystalline limestone, with spots of schist, benefiting from a Mediterranean climate with high temperature variations and hot, dry summers. After necessary green interventions during the vegetative cycle, the grapes were manually harvested and transported to the winery in crates.
Vinification: Grapes are selected, destemmed, followed by pre-fermentation maceration. Fermentation takes place in a lagar and stainless steel tank with temperature control.
Aging: Once malolactic fermentation is complete, the wine aged for 4 months in stainless steel tanks. After bottling, it rested in the bottle in our cellar for 3 months. To preserve all its qualities, it was not stabilized and may naturally create sediment.
Longevity: Between 5 and 15 years, if stored in a cool, dark place with the bottle laid down.
Food Pairing: Red meats, game, intense cheeses, and cured meats. Decantation is recommended.
