Herdade das Servas
Viticulture: Vineyards planted in red soils derived from brown or crystalline limestones, with spots of shale, benefiting from a Mediterranean climate with high thermal amplitudes and hot, dry summers. After necessary green interventions during the vegetative cycle, the grapes were hand-picked and transported to the winery in crates.
Winemaking: The grapes are selected, followed by cold maceration. Fermentation takes place in marble lagars with temperature control and foot treading.
Aging: After malolactic fermentation, the wine aged for 12 months in French oak barrels of 2nd and 3rd year. After bottling, it rested in the bottle for 24 months in the cellar. To preserve all its qualities, it was not stabilized, naturally forming sediment.
Longevity: Between 20 to 30 years if kept in a cool, dark place with the bottle lying down.
A wine for special moments that pairs very well with red meats, game, intense cheeses, and cured meats. Decantation is recommended.
