Herdade das Servas
Viticulture: Parcel V, installed in red soil derived from brown or crystalline limestones, with patches of schist, benefits from a Mediterranean climate with high thermal amplitudes and hot, dry summers. After necessary interventions during the vegetative cycle, the grapes were harvested manually and transported to the winery in crates.
Vinification: The grapes are destemmed, followed by pre-fermentation maceration in a marble lagar for 48 hours. Fermentation takes place in a lagar and stainless steel tank with temperature control.
Aging: Once malolactic fermentation is complete, the wine aged for 12 months in French oak barrels of 1st and 2nd year. After bottling, it rested in the cellar for 36 months. To preserve all its qualities, this wine has not been stabilized and may naturally create sediment.
Longevity: Between 20 to 30 years, if stored in a cool, dark place with the bottle laid down.
Food Pairing: Red meats, game, strong cheeses, and charcuterie. Decanting is recommended.
