Herdade das Servas
Viticulture: The Carignan grape is planted in a 13-hectare plot of the Cardeira Velha vineyard, in red soils derived from brown or crystalline limestones, with patches of schist, benefiting from a Mediterranean climate with high thermal amplitudes and hot, dry summers, with high annual insolation. After necessary interventions during the vegetative cycle, the grapes were manually harvested and transported to the winery in small crates.
Vinification: The grapes are destemmed, followed by pre-fermentation maceration in a marble lagar for 48 hours. Fermentation takes place in stainless steel tanks with temperature control.
Aging: Once malolactic fermentation is complete, the wine aged for 12 months in new French oak barrels. After bottling, it rested in the cellar for 30 months. To preserve all its qualities, it has not been stabilized and may naturally create sediment.
Longevity: Between 20 to 30 years, if stored in a cool, dark place with the bottle laid down.
Food Pairing: Red meats, game, strong cheeses, and charcuterie. Decanting is recommended.
