Herdade das Servas
Viticulture: Vines planted in red soils derived from brown or crystalline limestone, with spots of schist, benefiting from a Mediterranean climate with high temperature variations and hot, dry summers. After necessary green interventions during the vegetative cycle, the grapes were manually harvested, grape by grape, and transported to the winery in crates.
Vinification: After reception by grape variety, the grapes are destemmed and crushed, followed by pre-fermentation maceration. Fermentation occurs in stainless steel tanks and lagares with temperature control.
Aging: Once malolactic fermentation is complete, the wine partially aged for 12 months in French and American oak barrels of 2nd and 3rd year. After bottling, it rested in the bottle for 2 months in our cellar. To preserve all its qualities, this wine was not stabilized and may naturally create sediment.
Longevity: Between 5 and 15 years, if stored in a cool, dark place with the bottle laid down.
Serve with red meats, game, intense cheeses, and cured meats. Decanting is advised.
