The 2004 vintage is deep red in colour, with an intense nose of vanilla, blackcurrant and cedar. The elegant integration of tannins and fruit is immediately noticeable. Warm mulled spice aromas on the mid-palate complement the balanced and complex structure. The long, aromatic finish displays notes of leather and cardamom.
The wine is lovely and fragrant, and will age gracefully. It is recommended that this wine be decanted before serving to allow it to develop its full potential. This is especially important when serving young Dominus wines
Winter was normal with moderate rainfall. The vineyard received more than 11 centimetres of rain during 26 days in December, and 8 1⁄2 centimetres of rain in February. Little rain fell during the spring. A heat wave in March caused early budbreak – we saw 11 days at over 80°F. April was also warmer than average. All this warm weather resulted in a short growing season and an early harvest – the earliest on record for Dominus. September was a warm month, with 13 days above 90°F and 3 days above 100°F. We maintained canopy integrity to protect the grapes from heat during their final ripening stage.

Optical sorting of the berries.
Gentle pumping-over – delicately extracts aromas, colour, tannin, and reveals the personality of each blend.
Manual stacking from barrel to barrel every three months, using the skiff.
