With great aromatic intensity, this Napa Cabernet is a blend of mountain and valley fruit. The mountain fruit brings complex aromas of smoked tea, tobacco and sweet clove spice. The palate has a wonderfully pure aroma of blackcurrant and blueberry fruit, structural tannins still very even and well integrated with the vibrancy and intensity of the fruit. The added touch of savoury spice makes this a Napa Cabernet that has not over-ripened at the expense of finesse.
Inspired by the strength and grace exhibited in the great wines of Bordeaux, Cabernet Sauvignon from the cooler climate of Darioush, the vineyards of southern Napa Valley display extraordinary depth, character and balance. Now in their second decade, these vineyards of Mount Veeder, Napa Valley and Oak Knoll AVA’s have reached their limits, producing fruit with splendid concentration and power, compelling freshness and graceful complexity..Meticulous attention to detail in the vineyard and minimal cellar handling. Hand picked in small 28 pound baskets. Hand picked twice, before and after thinning. Fermentation includes cold soaking for 4 days in traditional fermenters with gentle pumps for optimal colour extraction and tannin management. Aged for 22 months in new barrels of 85% traditional French oak. Batches of barrels were racked 2-3 times per year for clarity.
