Covela
Quinta de Covela practices organic farming on granite soils that form a natural amphitheatre with several sun exposures. A landscape of terraces planted at low altitude on the
on the right bank of the Douro River, in the southern part of the Vinhos Verdes region (Minho).
Hand harvested. Harvesting is organised by vineyard plot to ensure that the grapes are picked at the right time. Transport in small boxes to avoid crushing. Manual selection of bunches. De-stemming followed by gentle crushing.
Fermentation with a light daily manual pumping over.
Post-fermentation maceration. Gentle pressing. Aged in 300 litre French oak barrels for 21 months. No stabilisation or filtration (a deposit may form in the bottle).
Produced only in exceptional years.
