Clandestino
From the Latin clandestinus. Done in secret; made in hiding; without anyone knowing; hidden; contrary to the laws or morals. Planted in the open sky, in the heart of the Dão region, the grapes that make up this Clandestino have a distant origin. Made in a complicit manner, by all those who harvested and worked them, this wine reveals itself fresh, greedy, enigmatic, and even – as the bad tongues say – immoral.
Vineyards: Vineyards that surround Adega da Teixuga, planted at 420 meters, south-facing, with 8 years of age.
Vinification: The two grape varieties that make up the blend were manually harvested and vinified together in stainless steel vats, with different degrees of maturation for each grape variety contributing to the overall balance. The fermentation was conducted at a controlled temperature of around 24 ºC and gentle pumping over to prioritize the elegance of the tannins. After malolactic fermentation, the wine aged in stainless steel vats.
