The two grape varieties that make up the blend were fermented together, thus promoting a superior integration of their particular qualities. One of the grape varieties is known for its chromatic and aromatic intensity, the other, on the contrary, is known for its discreet colour and contained and austere aromas, giving rise to a wine with the best of both worlds. The aromatic exuberance of one, with its tones of red and black fruits, is tempered by the finesse and freshness of the other variety, with its soft aromas, where black cherry and dark chocolate, pepper and a refreshing minerality stand out. Elegance and harmony are two striking characteristics, which are evident in the mouth, where freshness and the quality of the soft tannins contribute to a whole, admittedly clandestine in this region, but owing it its identity!
From the Latin clandestinus. In secret; made clandestinely; without anyone knowing; hidden; contrary to laws or morals. Planted in the open air and in the heart of the Dão, the grapes that give body to this Clandestino have a distant origin. Made in complicit manner, by all those who harvested and worked them, this wine reveals itself as fresh, indulgent, enigmatic, and even – according to rumors – immoral.
Pairs well with roasted cod, octopus à lagareiro, roast beef, and pork à Alentejana.
