Château Canon La Gaffelière
Situated at the foot of the hillside south of the medieval village of Saint-Emilion, the terroir of Château Canon La Gaffelière is made up of clay-limestone and sandy-clay soils, which are very filtering and particularly receptive to heat.
Due to the nature of the soil, the grape varieties have an atypical structure for the appellation, characterised by a perfect balance between Merlot and Cabernet. In this terroir, where ripening occurs very early, the Cabernet grapes flourish remarkably well, bringing to the opulence of the Merlot grapes a power and aromatic complexity that underlie the natural elegance and finesse of Canon La Gaffelière’s wines.
The winery structure, which is an extension of plot-based management, makes it possible to vinify perfectly homogenous lots. The different stages of vinification are carried out slowly, without excessive temperature increase, thus expressing the best of the vintage. The maturation process, carried out on fine lees, enhances the intrinsic qualities of the wine, offering each entity the benefit of individual treatment. Handling and interventions are drastically reduced, adapted to the typicality of each vintage.
