O Produtor, tasting note published in November 27th 2022
A light grenade hue accompanies delicate aromas of cherries and strawberries with a subtle aroma of old barrels providing a superb, rustic character. In the mouth, primary fruit aromas, especially cherries, with a silky texture complemented by rustic notes from the old barrels, giving the wine structure and a long, refreshing finish.
The grapes were gently crushed with 100% stalks in granite presses, where they were trodden by foot. The most important part of this winemaking process is the pre-fermentative maceration and the start of alcoholic fermentation, where extraction is very rigorous. The Charme initially ferments in the wine press, followed by barrels, where the fermentation ends. The process is completed with racking and ageing in French oak barrels for 15 to 19 months.
