Património ao Léu Grande Escolha Castelão is a wine that showcases the Castelão grape 100%, with the essence and identity of the magnificent terroir of the Lisbon region. Caves Bonifácio

The production of Caves Bonifácio wines begins with a careful selection of the grapes. Once harvested, they are unloaded into hoppers, the starting point of two parallel production lines – one for white grapes and the other for red grapes.

The red grapes, after destemming and crushing, are transferred to fermentation vats, undergoing a cold maceration process, followed by fermentation at controlled temperatures, with a pumping-over process to extract the compounds. Maceration and fermentation take place for the required time to achieve the color we aim for in our wines: intense ruby red.
