Vintage notes
2015 will be remembered as a truly textbook year. The winter was essentially mild with temperatures within the average range and abundant rainfall in January and February. Flowering occurred in the second week of April. The second part of April and the whole of May were rich in rainfall and sunny days; all this led to a regular development of the vegetative cycle, an excellent accumulation of water in the soil and a regular and prosperous flowering that finished around the end of May. June and July were dry and warm months, slightly above average. During the second week of August, rainfall lowered temperatures and considerably helped the ripening process. August and September continued with significant differences in temperature range between day and night, leading to an almost perfect balance between acidity, tannins and grape sugars.
Manual Harvest, 2nd and 3rd week of September
Vinification: We selected the bunches manually before destemming and sorted the grapes with an optical selector. This is followed by spontaneous fermentation without the addition of yeast and maceration is facilitated by frequent pressing. Everything takes place in temperature controlled conical steel vats for 24 days.
Ageing in oak barrels for 36 months
