Cartuxa
This wine associates its quality with the name of the Carthusian monks who, since 1598, practiced a solitary life of prayer in the Convent of Santa Maria Scala Coeli, in Évora. It was first produced in 1986.
DOC Alentejo -Évora.
Granitic soil type.
Winemaking: Produced from grape varieties, Aragonês, Trincadeira, Alicante Bousche and others, planted in the vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal maturation state, they are harvested and transported to the cellar, where the technological process begins with total destemming and light crushing. The grapes are then fermented separately, in stainless steel vats, at a temperature of 27ºC, followed by prolonged post-fermentation maceration. Aged for 12 months in French oak barrels and barrels and 12 months in bottle.
