Cara a Cara

Uncoupling and crushing. Fermentation occurs with very little mechanical action, low reassembling intensity and 2 “de-staging”, to preserve elegance. Maceration after fermentation until the end of November, where the wine is separated from the films that will be pressed later. This technique allows to increase the longevity of the wines, reducing astringency. Fermentation temperature of 23-25ºC in stainless steel tanks.

João Silva e Sousa Unipessoal

Trineto, great-grandson and grandson of wine producers in the Dão region, João Silva e Sousa started, at the age of 15, to work in his grandfather’s wineries and vineyards. As a winemaker, he began his career even before finishing his degree at the Instituto Superior de Agronomia. He worked for 10 years at Forrester, a company of the multinational group Bacardi-Martini, a Port Wine producer with the brands Offley, Diez Hermanos and Raínha Santa. With the acquisition of Forrester by Sogrape, she joined the Ferreira-Offley oenology team. Later, she assumed the responsibility of Sogrape’s Agricultural Operational Area, which included vineyards in the Verdes, Dão, Bairrada, Douro and Alentejo. At the beginning of the millennium he decided to use the knowledge acquired so far to make wines in an independent way. He was a founding partner of 2 companies where he created brands such as Castello d’Alba, Lua Cheia em Vinhas Velhas, Andreza, Maria Papoila, among others. He started his personal project with the Cara a Cara brand. He also works as a winery consultant in the Greens, Douro, Alentejo and Algarve.
