O Produtor, tasting note published in July 23rd 2019

Visual Aspect: Clear and ruby-colored.
Olfactory Aspect: Fresh and intense aroma. It integrates resinous aromas, such as pine needles, combined with notes of black fruits like plum. The presence of vanilla and caramel, from the aging in wood, adds complexity to the whole.
Gustatory Aspect: It is a wine of great elegance and good acidity, whose soft tannins contribute to its remarkable structure and balance. It has a long and persistent finish, giving it a strong aptitude to evolve in the bottle.

Borges

The Borges Reserva Dão Tinto 2016 wine is the reflection of an atypical year, which produced wines of excellent concentration and great longevity.

A complex and elaborated wine, reflecting Borges’ over 135 years of experience. Originating from vineyards over 20 years old, planted in sandy granite soil, in the Demarcated Region of Dão.

Vinification and Aging: Total destemming of the grapes followed by gentle crushing. Brief pre-fermentative maceration followed by fermentation in skins for 6-8 days, at a controlled temperature of 28ºC, with relatively frequent pumping over. After this, a post-fermentative maceration of a few weeks is carried out, followed by the separation of the wine from the masses with which it fermented, and finally, malolactic fermentation is induced. All the wine ages in French oak barrels for 24 months.

Bottling is done in an inert atmosphere with complete deoxygenation of the bottle. Bottled in July 2019.
