Quinta da Soalheira
Its name, Soalheira, perfectly translates the warmth we feel when, in the middle of summer, we walk through its paths. After covering the 5.5 kilometers that separate it from the main road, we truly understand the meaning of the expression “Douro deep.” A narrow road, with winding and steep curves, opens up to a breathtaking landscape: vineyards bordered by patches of rockroses, rosemary, and strawberry trees that stretch to over 500 meters of altitude, down to the riverbed, which here flows in a winding path.
Vinification and Aging: Total de-stemming of the grapes followed by gentle crushing. A brief pre-fermentation maceration is carried out, followed by fermentation on the skins for about 6 to 8 days at a controlled temperature of 28 ºC, with frequent pump-overs. After alcoholic fermentation, the wine is separated from the pomace. It then undergoes malolactic fermentation in stainless steel, followed by aging in French oak barrels for 9 to 12 months.
Food Pairing: Excellent with fresh and aged meats, roasts, game dishes, as well as well-prepared fish dishes like cod or octopus. Also pairs very well with cheeses and cured meats.
