O Produtor, tasting note published in May 27th 2020

Intense ruby colour. Wine with an intense and complex aroma, marked by mentholated notes of red fruits and black pepper, with some floral presence. In the mouth it is a wine with much flavour and volume. The presence of firm and striking tannins gives the wine a long and persistent finish with excellent acidity.

Borges

Total destemming of the grapes followed by gentle crushing. Part of the blend is vinified initially by the traditional method and finishing the fermentation in stainless steel, and the remaining blend is vinified only in stainless steel. In both vinifications, a brief pre-fermentation maceration is carried out, followed by fermentation in a controlled temperature of 28 to 30 ° C. After the alcoholic fermentation, a maceration period is carried out, after which the wine is separated from the masses with which it is fermented and, finally, malolactic fermentation is provoked. All the stages of the wine in French oak barrels for 24 months and 4 months in bottle.
