This wine is named after the mountain Puig des Teix, which is part of the Sierra de Tramontana range. With its 1062 meters, it is one of the tallest mountains on the island and also one of the most impressive. The Puig des Teix rises towards the sky just behind the village of Deià, which many consider the most beautiful place on the entire island. This was our first red wine produced, and we wanted to make it special but also easy to love, just like Deià. Our Garnacha vineyards are facing this mountain at an angle of 296° from the winery.
Vinification: This year, it was decided to base it on Grenache, but with almost as much Callet, keeping it at least equal to the previous year. This decision was made early on during one of the first barrel tasting sessions; during the final tasting session before blending, we decided to add that small but oh-so-important touch of magic in the form of 3% lush and fruity Merlot.
Aging in steel tank (Grenache): October 2021 – October 2022.
Aging in oak barrel (Callet): October 2021 – October 2022.
Bottling: November 2022.
The Teix red wine is the ideal companion for truffled mortadella and young raw-milk cheeses. Bruschetta with a variety of toppings. It is also great for a simple pasta with an excellent tomato sauce made with the best and sweetest tomatoes you can find.
It is such a versatile wine and pairs extraordinarily well with a wide variety of foods or on its own.
