Sweet, fruity, and with a typical earthy Pinot nose. Tobacco leaf and dried strawberries. Autumn forest / dry leaves. Complex and sophisticated. Crisp and fresh on the palate, with lots of energy. Red berries and spices like nutmeg and cloves. Smooth, silky tannins and a long and elegant finish.

This wine is named after the mountain of Puig de Randa, situated in the middle of the island and an isolated peak that does not form part of the Sierra de Tramontana. Although Puig de Randa is not a particularly tall mountain, at only 540 meters, it is undoubtedly one of the most popular — much like the Pinot Noir grape variety, which plays a significant role in this wine. Our Pinot Noir vineyards are facing this mountain at an angle of 157° from the winery.

Vinification: In 2021, we aimed to harvest our Pinot Noir with a lower potential alcohol than the previous year and with much more freshness and finesse. It is always a challenge to find the perfect balance between phenolic and physical ripeness with Pinot Noir. We harvested on August 10th and 11th and carefully brought in only perfect bunches, performing a rigorous selection in the vineyards to avoid dried and raisined grapes. This resulted in minimal need for sorting at the sorting table. The grapes were destemmed/crushed and left to ferment on the skins, with gentle and daily pump-overs and punch downs. They were then pressed, resulting in 6500 liters of beautiful Pinot Noir, which was transferred to a total of 9 500-liter barrels and left to rest for about a year. During this period, we periodically tasted the barrels and began to form a picture of how these different barrels would fit together in the annual “Pinot Puzzle” that is Randa!

Before bottling, a very gentle fining with egg whites was performed to round off the tannins and make the wine more velvety, as any Pinot Noir should be.

This is the ideal wine to pair with classic French bistro food, but it is also a wine that soothes the soul on a gloomy winter afternoon. Simply open a bottle and put on some Human League / Simply Red / George Michael and forget the rest of the world. Try it with quail, pheasant, or a rack of lamb! Slowly cooked to preserve all the juices and served with “Chucky” potatoes double-fried in duck fat and a simple salad with a mustardy vinaigrette. Simplicity is key!
