O Produtor, tasting note published in May 12th 2022
Ruby colour, intense, attractive aroma with a perfect balance of fruit and wood. Powerful taste, silky tannins, freshness and incomparable aroma typical of the grape variety.
It is now one of the trendiest reds from the Penalva Cooperative and a successful bet by the winemaking team, which aimed to recover the aromas and flavors of the most widely planted grape variety in the region until the 1980s.
Vinification: Crushing with total destemming, fermentation in stainless steel tanks at 30°C, aging for 12 months in new and used barrels, and bottling after 18 months.
Ideal for pairing with hearty dishes, such as octopus à lagareiro or roasted spare ribs.
As a result of a great work of reconversion of the vineyards made by its associates, today it receives grapes of the best selected varieties, coming from modern vineyards and turned to the production of quality.
We seek to produce wines that captivate the consumer by their quality and modernity but that still keep some of the typicality of the Dão Region, that is, fresh wines, with structure, fruit and good body, capable of pleasing the consumers of younger wines and also those more adept at aging wines, as the region has an excellent capacity to produce great aging wines, both white and red.
Adega Cooperativa de Penalva do Castelo has about 1000 members today, receives annually the grapes from more than 1200 ha of vineyards, produces an average of ten million litres of wine, has the most modern technology in vinification, ageing and bottling of wines, and is an unavoidable reference in Dão wines.
