A wine that shows some fine and elegant aromas of reduction, denoting red fruits, jam and some nuances of ripe fruit; in the mouth it has a good presence of soft, velvety tannins; the final stay is pleasant and long.
Fermented with partial destemming at a controlled temperature (24-28ºC); when the must reaches the desired sweetness, fermentation is interrupted by the addition of brandy (77%). It then ages in oak wood in the producer’s cellars in Vila Nova de Gaia until it is bottled between the 2nd and 3rd year after approval. Dark red in colour, Quinta do Cachão Vintage 1997 has a good balance between sweetness and alcohol, pairing very well with a dessert or cheese or even on its own at the end of a meal.
