Vinification: It begins with pre-fermentative maceration at a temperature of 10-12ºC. This is followed by fermentation in stainless steel lagares with robotized treading at a controlled temperature not exceeding 30ºC, ensuring a strong extraction of the constituents present in the skins. The aromatic intensity and elegance are due to the dominance of the Touriga Franca and Touriga Nacionalgrape varieties, as well as the presence of many other noble Douro grape varieties from very old vines over a hundred years old. Sousão contributes significantly to its structure, concentration, and persistence. Tinto Cão, on the other hand, contributes to its freshness and elegance. In order to optimize quality and the desired profile, a careful qualitative selection of the aguardente was carried out due to its organoleptic elegance. This blend of aromas, combined with those from the intense extraction, results in the intensity and elegance typical of an LBV.
Aging: Maturation/elevage in used 640-liter French oak vessels for 2 years. During this period, the wine undergoes rackings, analyses, and tastings that allow monitoring its evolution and defining the final blend.
It pairs wonderfully with “papos de anjo” (traditional Portuguese pastries made with eggs).
