Clear, bright, and almost luminous, with a canary yellow color and golden reflections. Its aromatic richness results from a subtle balance between fresh gentian and many plant extracts. On the palate, fresh gentian provides rich flavors that are both subtle and intense, followed by delicate floral and citrus notes. The taste is slightly syrupy, with a honey sweetness. The finish is bitter and prolonged, seasoned with a slightly spicy note and a lingering aftertaste.

Suze

For generations, Suze has been a delicious gentian liqueur, recognized for its original recipe and traditional production method.

Suze is made by macerating fresh gentian roots, both cultivated and wild, in grape-neutral alcohol. This maceration is then double-distilled and blended with herbs and other botanicals that have also been macerated. The blend is finally aged for 18 months.

With a low alcohol content (20% vol.), Suze is ideal for enjoying neat with ice or for enhancing cocktails of your choice, especially those with citrus and spice flavors, such as lemon, orange, or ginger ale.

It pairs well with soft cheeses like brie or camembert, nuts, smoked salmon or ham, and snacks like tapenade or olive pâté.

Adega Byrrh

Between the sea and the mountains, in the heart of Aspres, just 15 minutes from Perpignan, lies the famous Byrrh Winery in Thuir.

It all began like a real fairy tale. Around 1860, Simon and Pallade, two young brothers from a humble family of five children, whose father was a mule driver, decided to leave their home in the village of Corsavy to venture into the Roussillon plain. The brothers became traveling salesmen, selling haberdashery, fabrics, and wine.

After years of traveling around the region, they settled in Thuir, where they opened a shop. On September 14, 1866, Simon and Pallade Violet registered their business with Maître Auge, a notary from Thuir. This is how Byrrh was born, a vermouth-style aperitif, whose recipe combines the wines of Roussillon and Málaga with quinine, coffee, cocoa, and spices. It was the beginning of a great adventure.

They started with just a few small barrels, which they later replaced with larger second-hand casks. Their natural business sense led them to expand the company, importing wines from Málaga and Tarragona. Today, the Byrrh cellars house the world’s largest oak casks, with a capacity of over one million liters.

The prestigious Byrrh cellars have become a pillar of France’s industrial heritage.
