O Produtor, tasting note published in November 22nd 2018

Yellow color, lemon, with greenish tones. Complex matrix of a blend of ripe citrus fruits with guava, tangerine peel, marmalade, honey, and canned pineapple. Full-bodied but fresh with intense grapefruit. On the palate, it is rich and full. Sweetness in constant balance with acidity and without domination. Mineral, with an unusual texture, it is the perfect combination with cheese appetizers, dried fruits, and pâtés, or with fruit-based desserts. It can also be enjoyed on its own.

Ravasqueira

At Ravasqueira, there is a concern and a taste for the challenge of producing innovative, differentiated, and disruptive wines. This is a very special wine, both in terms of its production method and vinification or viticulture method. A wine that aims, above all, to surprise and evoke strong emotions, making its tasting a memorable moment.

Vinification: Initial harvest of clusters with the aim of leaving only one cluster per vine, after which the manual harvest of these clusters/vine is carried out during the cool morning, at the end of September. Transport to the winery is done in 20 kg boxes. Grapes are stored in a refrigerated chamber at 0ºC and frozen for 12 days at -5ºC. Cluster selection on a sorting belt. Pressing in a pneumatic press with stems at 2ºC for 16 hours. Alcoholic fermentation and aging in stainless steel on lees with light batonnage.
