Ice wine is a wine produced from grapes frozen on the vine. These grapes are made up of solid and liquid parts, the freezing of which allows a greater concentration of sugars. This method results in a very low yield from the vine, which can only produce one bottle. As a result, relatively small quantities of icewine are produced worldwide, making them generally very expensive.
Considered a dessert wine, it is frozen before fermentation. Icewine production is a bit risky, as the grapes must not be affected by “Botrytis Cinerea”, they must be totally healthy, so the frost must come over the whole vineyard before this happens, which requires a lot of skill, as the grapes must be harvested in a few hours. This can happen at any time, but usually in the first hour of the morning when it is sufficiently cold. In some cases, harvesting can take place after New Year’s Day (on a Northern Hemisphere calendar). This gives the ice wine its characteristic refreshing sweetness, balanced by a strong acidity.
