A classic gin created with only seven botanicals that deliver the essential flavors of a gin, born after nearly a year of careful development – a meticulous balancing act to find the perfect harmony between flavors.

Lind & Lime Gin Recipe: “We put juniper in the spotlight – after all, it’s the defining feature of a gin. To support this, we use the four classic ‘base’ botanicals: coriander seeds, angelica root, iris root, and licorice root. But if there’s another defining feature of a London Dry Gin, it’s citrus, and we wanted to use limes due to their association with our port of Leith, where we produce our gin. Finally, a final ingredient was needed to balance juniper and lime, and we did that with the smooth and sweet spice of pink pepper.”

The bottle shape is inspired by Leith’s remarkable industrial heritage. From the 18th to the 19th century, whiskey traders gradually took control of the coast, making Leith the national center for maturing and exporting Scotland’s national drink. The main raw materials for glass production were abundantly local: sand and seaweed (a large marine algae), and the earliest records of glass production in Leith date back to the 17th century.

We set out to create the very definition of what a London Dry Gin should be; to do something very simple, but do it to perfection. Lind & Lime Gin is forged from the talent, heritage, and industry of Edinburgh and its historic distilling district of Leith. In everything that we produce, our watchword is ‘balance.’

Our brand pays tribute to James Lind, born in Edinburgh in 1716, a relatively unsung hero of the Scottish Enlightenment; a surgeon on a ship called HMS Salisbury, he conducted what is recognized today as one of the first clinical trials ever recorded, playing a significant role in the history of scurvy prevention.

We take pride in the fact that our gin is made with 100% renewable electricity, 100% organic ingredients, and packaged with 100% plastic-free materials. We believe that being environmentally conscious is a key aspect of our business ethos, and we strive to make every aspect of our production process as sustainable as possible.

Our state-of-the-art electric still is one of the ways we do this. It is designed to produce high-quality gin while minimizing our environmental impact. Our still operates using renewable energy sources, such as wind and solar power. This not only allows us to produce our gin using clean energy but also reduces our carbon footprint. Using renewable energy is a key part of our sustainability strategy as we believe that it is essential to reducing our impact on the environment.

Our still is also designed to be easy to clean, reducing the need for harsh chemicals. This means that we can maintain a high standard of hygiene without compromising our commitment to sustainability. Our still is made from high-quality materials, ensuring that it is built to last and reducing the need for frequent replacements.
