O Produtor, tasting note published in August 5th 2022
Blondy colour, onion skin.
Aroma of honey and dried fruits with figs and almonds standing out. Caramel and roasting.
Smooth in the mouth, balancing freshness and sweetness. The finish is persistent, with a persistent aroma of dried fruit.
The clarified must, after a slight fermentation, is “racked” with grape brandy to prevent further fermentation, thus leaving a large amount of residual sugar.
The ageing is prolonged for 5 years in used oak barrels where the smothering acquires all the complexity that it demonstrates.
After ageing in oak it remains in stainless steel vats until bottling.
