Lobo Ruby
Using the knowledge acquired in the production of LoboDoce, we produce Lobo Ruby.
VINDIMA
Late October in dry weather. Harvested by hand.
Vinification
Total destemming and crushing, light maceration for 12 hours and bleeding, followed by fermentation in temperature-controlled open beakers and subsequent blending with high-quality wine brandy. This was followed by a 10-month stage in cement deposits made from the Palmela bedrock.
