Lobo Doce
This is the first fortified white wine bearing the name DO PALMELA from the Setúbal Peninsula region. It is a wine made from old sweet wines typical of Palmela, but which were gradually abandoned. As the story of our family goes, the grapes for this wine were the last to be harvested. At the time, these grapes were very rich in sugar. They were selected by hand, pressed and fermented in oak tunnels of varying capacities. Later, they were mixed with grape brandy for better preservation and aged for several years, sometimes in oblivion, as was the case in our vineyards. Casa Agrícola Assis Lobo had a few bottles (over 50 years old) of this precious wine and, after an in-depth study, created this Lobodoce, adding a few “touches” of aroma and flavour, adding Arinto with all its freshness of flavour and Moscatel-Graúdo with its inimitable fragrance.
VINDIMA
At the end of the 2012 harvest, in mid-October in dry weather. Harvested by hand.
Vinification
Total destemming and crushing, light maceration for 12 hours and bleeding followed by fermentation in a temperature-controlled open beaker and subsequent fermentation with the addition of high-quality wine brandy. This is followed by 10 months in cement deposits made from the Palmela bedrock.
