The color is amber with light coppery reflections.
The nose is rich and fruity. Notes of candied fruits, including grape, prune, and cherry, are complemented by aromas of orange peel, cocoa, and almond.
On the palate, the texture is silky and smooth. The notes of sour cherry and prune are confirmed.

Boizel

A modern and unique interpretation of the Champagne tradition. Produced in very limited quantities, RNV is here to write a new story: 24 months of aging in wood in old barrels, followed by 12 months of maturation in cellars, give this wine a natural fruity flavor that reflects the free spirit of Maison Boizel.

Although it was only recognized as a Protected Geographical Indication (PGI) in 2015, the history of Champagne ratafia dates back to the 13th century. Its unique name comes from the Latin expression “Rata fiat,” meaning “Let the treaty be ratified.” Thus, a glass of ratafia sealed an agreement between two parties.

For a long time, this wine was reserved for the winemakers and their close circle, accompanying their daily meals. Over the centuries, the techniques for making ratafia evolved, and today it is a rare wine, highly appreciated by connoisseurs, attesting to the history and know-how of Champagne winemakers.

Vinification: Ratafia Nouvelle Vague (RNV) is the result of a blend consisting of two-thirds Meunier and one-third Chardonnay, based on the 2020 harvest. Made according to the tradition of Maison Boizel, this wine is created through the mutage of grape must, after pressing, with neutral alcohol (Fine de Champagne) to stop fermentation and preserve the natural sugars of the grape.

Ratafia Nouvelle Vague is a magnificent wine to discover at the end of a meal: its tasting is equally pleasant with light desserts, such as a fruit salad, or with more chocolaty flavors. The wine also pairs very well with a platter of soft cheeses, such as gorgonzola or roquefort.

Champagne Boizel

In 1834, Auguste Boizel and Julie Martin, a young married couple, joined forces to create their own Champagne House. Originally pastry chefs, born and raised in the Côte des Blancs, they shared the same strong entrepreneurial spirit. Julie’s ancestors were winegrowers in Ay and Mareuil-sur-Ay, and her dowry included a lease contract in Mareuil-sur-Ay. They chose Épernay as the home for their new venture and both lent their names to the House: ‘Boizel-Martin’.

It is surely not by chance that the Champagne House has always been run by two, rather than one, pair of hands. That women have always played an equal role to that of the men. And that each generation has succeeded in creating very fine wines, as close as possible to the terroir, breaking with convention, and never hesitating to innovate to craft wines of uncompromising quality. Passion, dedication, a sense of duty, a desire to excel, and independent thinking have formed an unshakeable bond throughout the history of Champagne Boizel, and they continue to do so today.
