Pale, bright gold color with a slight greenish tinge. The bubbles are very fine.
The nose is refined and elegant; it opens with fresh floral aromas (hawthorn) and nutty notes (almond), supported by hints of citrus (grapefruit, lemon peel). The complexity of the aromatic range stands out with pastry notes accentuated by very delicate minerality.
On the palate, the wine is dense and ample, with a clean and balanced structure. The freshness and vivacity characteristic of the vintage are very evident and harmoniously combine with mineral, almost saline notes and generous, toasted aromas (grilled hazelnuts, brioche). The finish is persistent and fresh, with an elegant minerality.

Boizel

The Joyau de France Chardonnay was created in the magnificent year of 1989, almost thirty years after the launch of the House’s prestige cuvée under René Boizel, who, in the exceptional and memorable year of 1961, presented his Joyau de France.

Joyau Chardonnay is the quintessence of Champagne Boizel’s expertise: a perfect balance. With over a decade of aging in the cellars, this 100% Chardonnay wine expresses all the personality of the Côte des Blancs vineyards and reveals its great aging potential.

Vinification: For the elaboration of Joyau de France Chardonnay 2007, only Chardonnay from four crus of the Côte des Blancs were selected: Avize, Le Mesnil-sur-Oger, Oger, and Vertus. Only the first pressing is used to create this great Champagne. Aging of 15 years on lees. Dosage: 5g per liter.

Food and Wine Pairing: Joyau de France Chardonnay 2007 is a perfect match for seafood and simply cooked fish: plancha-cooked scallops, turbot with fennel, Arctic char with fresh vegetables, and also with free-range poultry, roasted or in a casserole (Bresse chicken with herbs).

Champagne Boizel

In 1834, Auguste Boizel and Julie Martin, a young married couple, joined forces to create their own Champagne House. Originally pastry chefs, born and raised in the Côte des Blancs, they shared the same strong entrepreneurial spirit. Julie’s ancestors were winegrowers in Ay and Mareuil-sur-Ay, and her dowry included a lease contract in Mareuil-sur-Ay. They chose Épernay as the home for their new venture and both lent their names to the House: ‘Boizel-Martin’.
