Since it is a low-fat fish, you should avoid bold, oaky wines, as they’d shadow this fine food. You should pair it with young reds, or young, slightly bodied whites. Make sure you add aroma to acidity: Alvarinho and Encruzado will do the trick, as well as young sparklings. If you’re looking for reds, Dão and Alentejo are probably the place to go for their smooth, fruity reds.
