Sourbet is one thing, Soup is another – and wine is none of them, so it should neither be kept in a freezer, nor in a stove. Metaphorically speaking, of course.
In order to age right, wine needs a constant, mild temperature: 12º Celsius are considered to be the right number. Lower temperatures slow down a wine’s evolution, while higher temperatures will age it prematurely. Above 24º Celsius, wine will oxidate, so make sure you avoid storing your wine close to any heat sources or direct sunlight.
Now think about the way wines are kept in large supermarkets – would you say they’re kept at the right temperature?
