It is an intemporal meal that has crossed centuries. Its said that it is the oldest meal in the world, and there are historical records that prove that it comes before the founding of fire (1.6 million years).
In Portugal, the soup is a very used in our cuisine since the old times. In fact, Portugal is the biggest consumer of soup in Europe and the third in the world, only surpassed by China and Vietnam. Curious, no?
Because I believe it is a great combination with wine and it is perfect with this cold weather, I leave some examples of nice soups to pair and harmonize with the right wine.
which wine for which soup?
Onion Soup – This classic asks for a light dry white wine. A classic from Douro, like Kopke.
Pumpkin Soup – Its typical sweetness will be even more interesting when paired with a Chardonnay, like the one from Quinta de Cidrô.
Spinach Soup – The slight bitterness of spinach pair perfectly with this wine from Alentejo, Montes Claros Reserve.
Chicken Soup – This soup is a source of power. Given that, nothing better than a good conversation and a Diálogo.
Vegetable Soup – The mix of vegetables will match very well with the fineness of the Sémillon grape, like the one from Quinta de Cidrô.
Seafood Soup – A soup rich in sea flavours pair perfectly with a Riesling. I suggest this one.
Bean Soup – This strong soup asks for a red wine. Personally, I think Julian Reynolds Reserve is “the one”.
Lentil Soup – Dense soup with a unique flavour, it needs tannins to pair with. Perfect for this is a wine from Quinta da Romaneira, its Petit Verdot.
Lastly, to pair with Portugal’s most famous soup, the Sopa da Pedra (Stone Soup), I recommend a wine from Dão, Ribeiro Santo Reserve.
